About This Journey
A French gastronomy experience with Anna Olson exploring the Languedoc region. From the medieval fortress of Carcassonne to the oyster beds of the Thau basin, this journey was a feast for all senses.
Guests cruised the Canal du Midi, explored ancient castles, created their own wine vintages, and dined at a Michelin-star restaurant — all while being guided by one of Canada's most beloved chefs.

Welcome to France
Arrival to Carcassonne, check in at 4-star hotel. Welcome dinner at La Marquière restaurant.
Carcassonne & Canal du Midi
Visit the UNESCO-listed walled Cité de Carcassonne. Lunch chez Christine. Afternoon cruise on Canal du Midi with autumn truffle tasting.
Narbonne & Marseillan
Les Halles de Narbonne market tour. Lunch at Les Grands Buffets. Lagoon of Thau cruise with oyster tasting.
Mirepoix & Wines
Medieval village of Mirepoix dating from the 10th century. Meet a dedicated wine grower and oenologist for Languedoc wine tasting.
Cooking with the Pros
Full cooking workshop with Anna Olson & local chef Nathalie — creating a complete French meal. Wine workshop where you create your own vintage to take home.
Castles & Olive Oil
Castle ruins of Lastours. Wine tasting at a small vineyard. Lunch in Minerve — one of France's most beautiful villages. Olive oil discovery. Farewell dinner at La Barbacane Michelin-star restaurant.
